Remove core and blossom ends. Cut into quarters. Cook tomatoes in a large saucepot until soft. Press through a sieve or food mill; discard seeds and peels. Place tomato pulp in a large saucepot; simmer until reduced to 3 cups.<BR/><BR/>To make Jam: Combine tomato pulp, powdered pectin, lemon peel, salt and lemon juice in a large saucepot. Bring to a boil over med-high heat, stirring occasionally. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard, 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Ladle hot jam into hot jars, leaving 1/4 inch headspace. Add caps and rings.
